Heat oil/ butter. Add garlic, celery & spring Onions. Saute for 3-4 minutes. The flame should be low to medium. Stir continously.
Add now vegetable Stock, carrots, kidney beans, salt, cumin seed powder, red Chilli Flakes & Coriander. Mix all ingredients now and simmer for 8-10 minutes.
Soup is ready to be served HOT. Before serving add tortilla chips, cheese and mix gently.
